Overnight Oats

This is the perfect breakfast or snack food to make in bulk on a Sunday night for the rest of the week and you can just grab it out of the fridge! It's perfect for those mornings I have an early morning class and I'm running late - I can just grab a jar out the fridge and eat it when I arrive at uni! It feels so much better and is far more filling than throwing a cereal bar in my bag on my way out the door!

There are so many variations to this so I'm going to share how I make my "base" and then share what I sometimes add to it (you can literally add anything!)

This recipe makes 3-4 pots for me, I use mini mason jars like these!

Ingredients:

3 tbsp spoons of greek yoghurt

1/2 cup porridge oats

1 tbsp honey

dash of vanilla extract

1 tbsp chia seeds

Splash of milk

Method:

  1. Mix everything together, adding milk to your preference (I like a quite thick mixture but others prefer something more liquidy!)

  2. Put into a big Tupperware and leave in the fridge overnight (alternatively you can already portion it out into individual containers!)

Some things I like to add:

  1. A banana and 1 tbsp chocolate chips

  2. Blueberries and crumbled stroopwaffel

  3. Various different fruits (Apples, pineapple, mango)

  4. Raspberries and dark chocolate chunks

  5. Cinnamon!

Yep it's really that easy and it will last around a week in the fridge! To find out how you can make this easily vegan read my blog post on how to make your mornings veggie!
